I love making these delicious potatoes because they’re so easy and work with so many different dishes. When I food prep meals for myself this side is always included. I love the simplicity of the prep, it works for busy people.
The cubed sweet potatoes can usually be found already pre-cut at the supermarket which saves a lot of time!
I take a baking sheet and line it with parchment paper to keep things even easier for clean up time! Next preheat the oven to 350 and spread the potatoes on the pan.
I then drizzle with extra virgin olive oil & some organic honey. Sprinkle cinnamon, parsley (dry or fresh) and a little salt. Toss to coat evenly, then bake for about 45 minutes or until the potatoes are fork tender. I usually just turn them one time halfway through.
You can also add some diced onion if you like more of a hash brown style treat.
Aside from the more obvious pairings, my favorite way to enjoy these is with my eggs in the morning. I will either mix some right into an omelet or sometimes just crack two eggs right on top- so easy! Good morning!!!
I’m sure you will come up with your own favorites way to enjoy this dish, but even alone this is a great tasting way to prepare potatoes.
